Soup on Sunday: Simple Vegetable Soup

Using a few odds and ends from the garden, I came up with a really simple and delicious soup this afternoon. The ultimate comfort food when you're chilled and hungry.

1 tablespoon olive oil
2 medium zucchini, diced
3 medium carrots, peeled, diced
2 garlic cloves, crushed
1 teaspoon dried basil
1 teaspoon dried oregano
5 cups vegetable stock
10 cherry tomatoes, whole
a handful of young spinach
3 tablespoons chopped fresh parsley
2 tablespoons chopped fresh cilantro
sea salt and fresh ground pepper to taste

Heat olive oil over medium heat in a heavy stockpot. Add zucchini, carrots, garlic, basil and oregano to the stockpot. Sauté until vegetables are tender. Add vegetable stock, cherry tomatoes, spinach, parsley, cilantro. Bring mixture to a low boil.

Reduce heat, cover and simmer until vegetables are tender, about 30 minutes. Ladle into bowls and sprinkle with additional parsley.

Serves 2 - 4

(If you can get Chipotle Knorr Mini Cubes, a tiny pinch adds a nice zip)

What a great, gardener-friendly recipe! You might have just launched a full-blown vegetable soup kick. It's really hot in New England right now, but I would love to share this recipe with my readers when things cool down. May I link next month?
Thank you...
Michaela

This sounds absolutely wonderful. I have more cherry and grape tomatoes than I know what to do with so I will certainly try this recipe. Thank you for sharing and I hope that you have a wonderful day.

Hi Ronda
It must be starting to get cool in Scotland now that you've switched back to soups on Sundays. Like Michaela, it's too hot in Toronto to even think about soup. But it won't be long before it's soup weather.

Hmmm... I think I'll make a variation of this today using what I have in the cupboard!

Sounds divine--homemade soups are good for the soul. It's still pretty hot in Southern California, I'll try this out towards the end of October. Thanks and have a great week.

Sometimes a good, old-fashioned (or shall I say classic) veggie soup is just what I crave. Can't wait to try this out!

I'm on vacation right now in Banff and while we are having the time of our lives, I am definitely craving something homemade. Your soup recipe looks amazing (not much for vegetarians up here--Canadians love their meat it seems). Every Saturday there is a little Farmer's Market near our house in L.A. I will definitely bring this recipe along next time I go.

Thanks!
